  2. Wash and peel sweet potatoes and carrots. Chop into 3/4-inch to 1-inch pieces and place in a large mixing bowl.
  3. In the bowl, add minced garlic, olive oil, and maple syrup. Sprinkle in thyme, rosemary, cinnamon, and salt. Toss to coat evenly.
