  • 2 medium Bell Peppers any color or substitute with zucchini
  • 1 cup Kimchi homemade or store-bought
For Assembly
  • 4 pieces Hoagie Rolls gluten-free options available
  • 8 slices Cheese provolone, cheddar, mozzarella, or pepper jack

Method
 

Preparation Steps
  1. Thinly slice the beef sirloin against the grain into strips around a quarter-inch thick.
  2. Chop one onion and a couple of bell peppers into bite-sized pieces.
  3. Gather fresh kimchi for assembly.
Marination and Cooking
  1. Whisk together soy sauce, sesame oil, minced garlic, and sugar in a medium bowl to create a marinade.
  2. Toss the sliced beef sirloin in the marinade and let it sit for 15 minutes.
  3. Preheat your skillet over medium-high heat.
  4. Add vegetable oil to the skillet, then sauté the chopped onions and bell peppers for about 5 minutes until they are tender.
  5. Add the marinated beef sirloin to the skillet and cook for about 5 minutes, stirring occasionally until browned.
  6. Mix the beef with the sautéed vegetables.
  7. Add kimchi to the skillet and cook for 2 additional minutes, stirring to combine.
Assembling
  1. Toast hoagie rolls under the broiler for about 2 minutes until golden brown.
  2. Fill the toasted rolls with the bulgogi mixture and top with cheese.
  3. Broil for another 2 minutes until the cheese melts and bubbles.
  4. Let cool slightly before serving.
