Cooking Steps
  1. Preheat your oven to 450°F (232°C) to achieve that beautifully crispy crust.
  2. In a food processor, blend cilantro, lime juice, jalapeño, kosher salt, toasted pine nuts, and cotija cheese. Gradually drizzle in olive oil until it reaches a thick, creamy consistency.
  3. Cook chorizo in a skillet over medium heat until browned and crumbly, about 5-7 minutes. Drain excess grease and set aside.
  4. Grease a 9"x12" sheet pan with olive oil. Roll prepared pizza dough into a rectangular shape and place it into the greased pan.
  5. Spread cilantro pesto over the dough, then sprinkle mozzarella cheese, followed by the cooked chorizo and additional cotija cheese.
  6. Bake for 10-14 minutes or until the crust is golden brown and the cheese is melted.
  7. Allow the pizza to cool for a few minutes, then garnish with sour cream, cotija, cilantro leaves, and toasted pine nuts.
