- Preheat your oven to 450°F (232°C) to achieve that beautifully crispy crust.
- In a food processor, blend cilantro, lime juice, jalapeño, kosher salt, toasted pine nuts, and cotija cheese. Gradually drizzle in olive oil until it reaches a thick, creamy consistency.
- Cook chorizo in a skillet over medium heat until browned and crumbly, about 5-7 minutes. Drain excess grease and set aside.
- Grease a 9"x12" sheet pan with olive oil. Roll prepared pizza dough into a rectangular shape and place it into the greased pan.
- Spread cilantro pesto over the dough, then sprinkle mozzarella cheese, followed by the cooked chorizo and additional cotija cheese.
- Bake for 10-14 minutes or until the crust is golden brown and the cheese is melted.
