Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your baking sheet, and cover it lightly with cooking spray.
  2. In a large skillet over medium heat, add the lean ground beef. Cook for about 5-7 minutes until browned.
  3. Stir in the sofrito, minced garlic, diced onion, and green pepper into the skillet. Cook for another 3-5 minutes.
  4. Pour in the tomato sauce and water, stirring together. Let this simmer on low heat for about 10 minutes.
  5. While the filling simmers, peel the ripe plantains and slice them along the curve, creating a slit to scoop out a small section.
  6. Place the prepared plantains on the greased baking sheet and spray lightly with cooking spray. Bake for about 25 minutes.
  7. Carefully fill each baked plantain with the meat mixture, being careful not to overfill.
  8. Generously sprinkle the grated cheese on top of each filled plantain.
  9. Return the plantains to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
