- Preheat your oven to 350°F (175°C). Gather your baking sheet, and cover it lightly with cooking spray.
- In a large skillet over medium heat, add the lean ground beef. Cook for about 5-7 minutes until browned.
- Stir in the sofrito, minced garlic, diced onion, and green pepper into the skillet. Cook for another 3-5 minutes.
- Pour in the tomato sauce and water, stirring together. Let this simmer on low heat for about 10 minutes.
- While the filling simmers, peel the ripe plantains and slice them along the curve, creating a slit to scoop out a small section.
- Place the prepared plantains on the greased baking sheet and spray lightly with cooking spray. Bake for about 25 minutes.
- Carefully fill each baked plantain with the meat mixture, being careful not to overfill.
- Generously sprinkle the grated cheese on top of each filled plantain.
- Return the plantains to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
