Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken with finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix vigorously using your hands until the ingredients are well integrated, about 2-3 minutes.
  2. Dampen your hands with water and form the chicken mixture into compact oval shapes, about the size of an egg.
  3. Preheat your grill to medium-high heat, around 400°F (200°C), and brush the grill grates with olive oil.
  4. Carefully place the koftas on the grill and grill for 10-12 minutes, turning occasionally until golden-brown and cooked through.
  5. In a separate bowl, mix plain yogurt with fresh lemon juice and a pinch of salt; stir until smooth.
