Step-by-Step Instructions
  1. Trim and cut the sirloin or ribeye steak into bite-sized cubes. Pat dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add steak cubes in a single layer and sear for 2-3 minutes on each side until golden brown. Remove and let rest.
  3. Lower heat and add unsalted butter to the skillet. Once melted, sauté minced garlic for about 30 seconds.
  4. Return seared steak to the skillet and toss with garlic butter to coat each piece thoroughly.
  5. In a separate saucepan, melt an additional tablespoon of butter and sauté 2 more minced garlic cloves for 30 seconds. Add heavy cream and bring to a gentle simmer, whisking continuously, then gradually mix in Parmesan cheese until smooth.
