  • 1 tbsp Dry oregano Can mix with other herbs.
  • 1 cup Water or stock Creates steam during roasting.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Combine the chicken thighs with olive oil, honey Dijon mustard, minced garlic, salt, lemon zest, and dry oregano in a large mixing bowl and mix well. Marinate for at least one hour, preferably overnight.
  3. Thread the marinated chicken onto skewers.
  4. Place the skewered chicken in the oven and pour 1 cup of water or stock into the tray. Roast for about 75-90 minutes until the internal temperature reaches 165°F (75°C).
  5. Check occasionally and cover with aluminum foil if browning too quickly.
  6. Remove from the oven and let rest for 10-15 minutes before slicing.
