- Preheat your oven to 425°F (220°C).
- Combine the chicken thighs with olive oil, honey Dijon mustard, minced garlic, salt, lemon zest, and dry oregano in a large mixing bowl and mix well. Marinate for at least one hour, preferably overnight.
- Thread the marinated chicken onto skewers.
- Place the skewered chicken in the oven and pour 1 cup of water or stock into the tray. Roast for about 75-90 minutes until the internal temperature reaches 165°F (75°C).
- Check occasionally and cover with aluminum foil if browning too quickly.
- Remove from the oven and let rest for 10-15 minutes before slicing.
