  • 1 tablespoon Dijon Mustard optional but recommended
  • 1 teaspoon Kosher Salt adjust based on dietary needs
  • ½ teaspoon Black Pepper or white pepper for milder flavor
For the Chicken and Vegetables
  • 2 pounds Chicken Thighs (bone-in, skin-on) or chicken breasts
  • 1 medium Zucchini can substitute with bell peppers or asparagus
  • 1 medium Yellow Bell Pepper any color bell pepper works
  • 1 medium Red Onion can use yellow or white onion
  • 1 cup Cherry or Grape Tomatoes halved Roma tomatoes are also an option
  • ½ cup Kalamata Olives green olives can be a substitute
  • ½ cup Feta Cheese or omit for dairy-free option
  • ¼ cup Fresh Parsley chopped for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, whisk together the marinade ingredients.
  3. Marinate the chicken by coating it thoroughly with the marinade and letting it sit for 10-15 minutes.
  4. Prepare the vegetables and toss them with the remaining marinade on a baking sheet.
  5. Nestle the marinated chicken among the vegetables on the baking sheet and bake for 30 minutes.
  6. Add Kalamata olives and crumbled feta and return to the oven for an additional 10-15 minutes until cooked through.
  7. Let it rest briefly, garnish with parsley, and serve straight from the pan.
