  • 2 medium-sized carrots diced or sliced into semi-circles
  • 0.5 cup sliced celery
  • 0.5 medium to large onion finely diced
  • 1 teaspoon minced garlic
  • 6 tablespoons vegan butter
  • 0.33 cup all-purpose flour or gluten-free flour
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme leaves
  • 1.5 cups vegan vegetable broth low-sodium options available
  • 1 cup frozen peas or fresh peas
  • 0.67 cup vegan heavy cream can substitute with blended silken tofu or coconut milk
Topping
  • 2-3 cups vegan stuffing homemade or store-bought, do not bake beforehand

Preparation Steps
  1. Preheat your oven to 375°F (190°C) for the pie crust.
  2. Melt the vegan butter in a large skillet over medium heat.
  3. Sauté the onion, minced garlic, carrots, and celery for about 5-7 minutes until softened.
  4. Sprinkle flour over the sautéed vegetables and stir to combine, then gradually add vegetable broth and vegan heavy cream.
  5. Fold in vegan chick’n pieces and frozen peas. Season with salt, pepper, and thyme.
  6. Pour filling into pie crust and layer vegan stuffing on top.
  7. Bake for 20-25 minutes until topping is golden brown and filling is bubbly.
  8. Let cool for 10 minutes before serving.
