  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 1 tbsp nutritional yeast or Parmesan cheese if not vegan
  • 1 tbsp Italian seasoning
  • 1/2 tsp sea salt adjust to taste
  • 1/4 tsp black pepper adjust to taste
  • 2 tbsp tomato paste
  • 1 cup whole wheat breadcrumbs add more if the mixture is too wet
  • 1 tbsp flax egg 1 tbsp ground flaxseed mixed with 3 tbsp water for vegan option

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine lentils, onion, garlic, nutritional yeast, Italian seasoning, salt, pepper, and tomato paste. Pulse until well blended but still slightly chunky.
  3. Gradually add breadcrumbs, pulsing until the mixture holds its shape. Adjust with more breadcrumbs if too wet.
  4. Scoop out tablespoon-sized portions and roll into balls, placing them on the prepared sheet.
  5. Bake for 30–35 minutes, flipping halfway through for even browning.
  6. Let cool slightly before serving. Enjoy with spaghetti, in a sub, or with salad.
