Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease the baking dish with olive oil.
  2. In a large mixing bowl, combine the cottage cheese with broccoli, bell pepper, zucchini, cherry tomatoes, spinach, and red onion.
  3. In a separate bowl, whisk together the eggs, olive oil, garlic powder, onion powder, black pepper, salt, and dried oregano.
  4. Pour the egg mixture over the vegetables and stir gently to coat.
  5. Transfer the mixture to the greased baking dish, spreading it evenly.
  6. Sprinkle the shredded mozzarella cheese evenly over the top.
  7. Bake for 30-35 minutes until golden brown on top and the center is set.
  8. Allow to cool for 5 minutes before slicing and serving warm.
