Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F). Line a 9x9 inch baking dish with baking paper.
  2. Grate the zucchini and carrot into a mixing bowl, sprinkle with salt, and let sit for 10 minutes to drain excess moisture.
  3. In a frying pan over medium heat, add olive oil, then cook diced onion and bacon until translucent and crispy, about 5-7 minutes.
  4. Let the onion and bacon mixture cool, then combine with the drained vegetables, bell pepper, cheddar cheese, and flour.
  5. Add the eggs, milk, and remaining olive oil. Season with salt and pepper, and stir until well combined.
  6. Pour the mixture into the baking dish, smooth out the top, and sprinkle additional grated cheese if desired. Bake for 35-40 minutes.
  7. Allow to cool in the dish for at least 10 minutes before slicing into squares. Serve warm or let cool for meal prep.
