Preparation
  1. Start by cutting 1 pound of skinless salmon filet into 1-inch bite-sized pieces. Pat each piece dry with paper towels to remove excess moisture.
  2. Arrange three shallow bowls. In the first bowl, mix all-purpose flour with kosher salt. In the second bowl, beat an egg together with Dijon mustard. Combine panko breadcrumbs, garlic powder, onion powder, dried dill, and dried parsley in the third bowl.
  3. Coat each salmon piece in the seasoned flour, then dip into the egg mixture, and finally press into the panko mixture to create a thick coating.
  4. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Arrange the breaded salmon bites in a single layer.
  5. Bake the salmon bites for about 10 minutes until golden and cooked through.
  6. Turn on the broiler, flip each salmon bite carefully, and broil for an additional 2-3 minutes.
