Ingredients
  

For the Udon Bowl
  • 1 lb Ground Pork or ground chicken/beef
  • 8 oz Udon Noodles or soba/rice noodles for gluten-free
  • 1 medium Onion or shallots/green onions
  • 2 cloves Minced Garlic fresh preferred
  • 2 cups Cabbage or bok choy/spinach
  • 1 medium Carrot julienned
  • 1 cup Mushrooms sliced, any type
  • 2 stalks Green Onions for garnish
For the Sauce
  • 2 tbsp Cooking Oil sesame oil recommended
  • 3 tbsp Soy Sauce or tamari for gluten-free
  • 1 tbsp Oyster Sauce or hoisin for vegan
  • 1 tbsp Dark Soy Sauce or regular if preferred
  • 2 tbsp Mirin or rice vinegar
  • 1 tbsp Brown Sugar or granulated sugar
  • 1/4 tsp Pepper

Method
 

Cooking Steps
  1. In a mixing bowl, combine soy sauce, oyster sauce, dark soy sauce, mirin, brown sugar, and pepper. Whisk until smooth and set aside.
  2. Heat a large frying pan over medium heat and add sesame oil. Once hot, sauté minced garlic and diced onion for 1-2 minutes.
  3. Push garlic and onion to one side of the pan. Add ground pork and cook for 1-2 minutes, breaking it apart until browned.
  4. Stir in cabbage, carrot, and mushrooms. Cook for another 2-3 minutes until veggies are tender but still crunchy.
  5. Add cooked udon noodles and prepared sauce to the pan. Toss everything together for 1-2 minutes to combine.
