- Peel, core, and slice 6–8 firm tart apples into ½-inch thick wedges. Toss with lemon juice.
- Whisk together brown sugar, granulated sugar, cinnamon, and nutmeg in a bowl and set aside.
- Grease the slow cooker, layer half of the apples, then half of the sugar mixture. Repeat and add butter on top.
- Drizzle with lemon juice and vanilla extract.
- Cover and cook on LOW for 3–4 hours. Stir halfway through to ensure even cooking.
- Mix cornstarch with cold water and add to the slow cooker in the last 30 minutes.
- Serve warm alone, over pancakes, or with ice cream.
