Preparation Steps
  1. Cut the skinless salmon into 1-inch cubes and place in a mixing bowl. Drizzle with olive oil and lemon juice, add honey, sumac, garlic powder, parsley, dill, salt, and black pepper, and toss to coat.
  2. Preheat your oven to 425°F (220°C). Arrange the seasoned salmon on a lined sheet pan and bake for 10-12 minutes until opaque and slightly caramelized. Optionally, broil for 2 minutes for extra crispiness.
  3. For air fryer, set to 400°F (200°C) and cook the salmon cubes for 8-10 minutes until tender and golden-brown.
  4. Prepare the herb whipped feta by blending feta cheese, Greek yogurt, olive oil, mixed herbs, and lemon juice in a food processor until smooth, adding salt to taste.
  5. Transfer salmon bites to a serving platter, spread whipped feta on the plate, top with salmon cubes, drizzle with honey, and garnish with parsley and lemon wedges.
