- While the sweet potatoes are roasting, heat a skillet over medium heat and sauté the diced yellow onion until translucent, about 3–5 minutes.
- Add the lean ground beef to the skillet with the softened onions, cook until browned, and add taco seasoning.

- Top with the seasoned ground beef mixture, followed by avocado slices and a dollop of cottage cheese.
