- Preheat your oven to 220°C (425°F) and position the oven rack in the middle.
- Line a baking sheet with parchment paper or a silicone baking mat.
- Sift together the self-raising flour, baking powder, salt, cayenne pepper, and mustard powder.
- Add cold, cubed butter into the flour mixture and mix until it resembles coarse crumbs.
- Whisk together the milk and egg, then pour into the dry ingredients and mix until just combined.
- Lightly flour your work surface and gently knead the dough until it comes together.
- Cut the dough into 8 equally sized scones and place them onto the prepared baking sheet.
- Brush the tops of the scones with a little milk and bake for 15-20 minutes until golden.
- Allow to cool on a wire rack for a few minutes before serving.
