Step-by-Step Instructions
  1. In a small mixing bowl, combine softened cream cheese, Greek yogurt, chopped chives, fresh dill, and ground pepper. Blend until smooth and creamy for about 2-3 minutes.
  2. Preheat your toaster or skillet over medium heat. Lightly toast 2 slices of whole wheat bread until golden brown, about 2-3 minutes per side in a skillet or 3-4 minutes in the toaster.
  3. Slice the fresh tomatoes into ¼-inch thick rounds, aiming for 4-6 slices per sandwich.
  4. Spread the herby cream cheese mixture evenly on one side of each toasted bread slice.
  5. Layer the tomato slices generously on top of the cream cheese spread on one slice of bread. Top with the second slice, spread side down.
  6. Optionally sprinkle fresh herbs or sea salt on the top slice before cutting the sandwich diagonally into halves.
