Preparation
- Blend 1 cup of frozen peas with 1/4 cup of grated Parmesan cheese, 2 tablespoons of olive oil, the juice of half a lemon, and half a garlic clove until a rough paste is achieved.
- Preheat your broiler to high. Slice ciabatta bread into 1-inch thick pieces, drizzle with olive oil, and toast under the broiler for 2-3 minutes on each side.
- Rub the remaining half garlic clove over the warm ciabatta slices after toasting.
- Spread the prepared pea topping over each slice of toasted ciabatta, sprinkle with additional Parmesan and lemon zest, and top with optional pea shoots.
- Sprinkle with black pepper and serve immediately.
