Ingredients
  

For the Pea Topping
  • 1 cup frozen peas or fresh peas, blanched
  • 1/4 cup grated Parmesan cheese or vegan cheese
  • 2 tablespoons olive oil plus more for drizzling
  • 1/2 large lemon juiced
  • 1/2 clove garlic fresh, to taste
For the Bread
  • 1 loaf ciabatta bread or rustic/gluten-free bread
For Garnishing
  • 1 tablespoon extra virgin olive oil for drizzling
  • 1 teaspoon lemon zest
  • to taste black pepper

Method
 

Preparation
  1. Blend 1 cup of frozen peas with 1/4 cup of grated Parmesan cheese, 2 tablespoons of olive oil, the juice of half a lemon, and half a garlic clove until a rough paste is achieved.
  2. Preheat your broiler to high. Slice ciabatta bread into 1-inch thick pieces, drizzle with olive oil, and toast under the broiler for 2-3 minutes on each side.
  3. Rub the remaining half garlic clove over the warm ciabatta slices after toasting.
  4. Spread the prepared pea topping over each slice of toasted ciabatta, sprinkle with additional Parmesan and lemon zest, and top with optional pea shoots.
  5. Sprinkle with black pepper and serve immediately.

Notes
