- Preheat your oven to 350°F (175°C) and prepare a 13x9-inch baking dish with nonstick cooking spray.
- In a large skillet over medium-high heat, add 1 pound of ground beef and 1 finely chopped onion. Cook until the meat is no longer pink and the onions are soft, about 5-7 minutes.
- Sprinkle 1 packet of taco seasoning over the meat and pour in ½ cup of water. Stir and bring to a gentle boil, then reduce heat and let simmer for 2-3 minutes.
- Add 1 can of drained black beans and 1 can of diced tomatoes with green chiles. Stir in ½ cup of sour cream and cook for an additional 8-10 minutes.
- Layer Fritos corn chips in the bottom of the baking dish, then add 1 cup of shredded cheese and top with the ground beef mixture. Sprinkle remaining cheese on top.
- Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for another 5 minutes until cheese is bubbly and golden.
- Let sit for a few minutes before serving. Top with extra Fritos and your favorite toppings like green onions, sour cream, guacamole, salsa, or jalapeños.
