Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 13x9-inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium-high heat, add 1 pound of ground beef and 1 finely chopped onion. Cook until the meat is no longer pink and the onions are soft, about 5-7 minutes.
  3. Sprinkle 1 packet of taco seasoning over the meat and pour in ½ cup of water. Stir and bring to a gentle boil, then reduce heat and let simmer for 2-3 minutes.
  4. Add 1 can of drained black beans and 1 can of diced tomatoes with green chiles. Stir in ½ cup of sour cream and cook for an additional 8-10 minutes.
  5. Layer Fritos corn chips in the bottom of the baking dish, then add 1 cup of shredded cheese and top with the ground beef mixture. Sprinkle remaining cheese on top.
  6. Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for another 5 minutes until cheese is bubbly and golden.
  7. Let sit for a few minutes before serving. Top with extra Fritos and your favorite toppings like green onions, sour cream, guacamole, salsa, or jalapeños.
