Step-by-Step Instructions for Lemon Pizza
- Prepare the Dough: Begin by making your pizza dough, whether from scratch or using a store-bought option. If using homemade dough, allow it to proof in a warm area for 1 hour until it has doubled in size.
- Preheat the Oven: While the dough is rising, preheat your oven to 450°F (230°C). This high temperature ensures a crispy and golden crust.
- Prepare Cheese: Cut your fresh mozzarella into thick slices or chunks and drain any excess moisture on a paper towel.
- Shape Dough: Roll out the proofed dough on parchment paper into a 9x13 inch rectangle.
- Make Brine: In a jar, combine extra virgin olive oil, water, chopped fresh parsley, grated garlic, lemon zest, lemon juice, salt, and black pepper. Shake to emulsify.
- Add Toppings: Make dimples in the rolled-out dough, pour the brine over it, and evenly distribute the mozzarella pieces on top.
- Bake Pizza: Transfer the Lemon Pizza to the preheated stone or baking sheet and bake for about 8-10 minutes until golden brown.
- Serve: Remove from the oven, drizzle with additional lemon juice, sprinkle with grated Parmesan cheese and fresh parsley, and slice to serve.
