- Prep the pan by greasing a 9x9-inch baking pan with non-stick spray or lining it with parchment paper.
- In a large saucepan over low heat, melt the 4 tablespoons of unsalted butter until smooth.
- Add the 5 cups of mini marshmallows and stir until fully melted.
- Remove from heat and stir in the lemon zest and lemon extract.
- Gently fold in the 6 cups of Rice Krispies cereal until evenly coated.
- Transfer the mixture into the prepared baking pan and press down evenly.
- Melt the 1 cup of white chocolate chips in a microwave-safe bowl.
- Drizzle the melted chocolate over the mixture while still warm.
- Allow to cool at room temperature for at least 30 minutes before cutting into squares.
