Baking Instructions
- Preheat your oven to 375°F (190°C) and grease an 8x8-inch baking dish.
- In a medium bowl, combine the rolled oats, ground cinnamon, ground nutmeg (if using), baking powder, and salt. Whisk until well-integrated.
- In another bowl, whisk together the eggs, milk, vanilla extract, oil, and maple syrup or honey until smooth.
- Pour the wet mixture into the bowl of dry ingredients, gently folding them together until just combined. Fold in the grated zucchini and blueberries.
- Pour the combined mixture into the greased baking dish, using a spatula to spread evenly.
- Place in the oven and bake for 40-45 minutes until the top is golden brown and a toothpick comes out clean.
- Remove from the oven and let cool for about 10 minutes before slicing.
