Wet Ingredients
  • 1 cup Milk of Choice plant-based milks work for dairy-free
  • 1/4 cup Maple Syrup or Honey or agave syrup for vegan
  • 2 large Eggs or flax eggs for egg-free
  • 1 teaspoon Vanilla Extract for enhanced flavor
Fruit and Zucchini
  • 1 cup Blueberries fresh or frozen
  • 1 medium Grated Zucchini do not squeeze dry

Method
 

Baking Instructions
  1. Preheat your oven to 375°F (190°C) and grease an 8x8-inch baking dish.
  2. In a medium bowl, combine the rolled oats, ground cinnamon, ground nutmeg (if using), baking powder, and salt. Whisk until well-integrated.
  3. In another bowl, whisk together the eggs, milk, vanilla extract, oil, and maple syrup or honey until smooth.
  4. Pour the wet mixture into the bowl of dry ingredients, gently folding them together until just combined. Fold in the grated zucchini and blueberries.
  5. Pour the combined mixture into the greased baking dish, using a spatula to spread evenly.
  6. Place in the oven and bake for 40-45 minutes until the top is golden brown and a toothpick comes out clean.
  7. Remove from the oven and let cool for about 10 minutes before slicing.
